Michelle Hyland co-founded Gourmet Tart with her husband, Fintan, in 2001. The bakery and café business has a number of sites across Galway city and employs 80 staff. It also has a catering service that feeds students at NUI Galway and GMIT on a daily basis and supplies the desserts for corporate entertaining at the Galway Races each year.
